BROILED OPEN FACE VEGGIE SANDWICH

This is one of my favorite meals. The flavors of fresh veggies with melted mozarella and pesto just hit the spot! The ingredients are just guidelines, and I'm always adding whatever veggies I have on hand.
4 slices sourdough bread (or bread of choice)
2 tablespoons pesto sauce
1 tablespoon mayonnaise
4 slices mozzarella cheese
2 tomatoes, sliced
1/2 red onion, sliced
1 eggplant, sliced and roasted (optional)
1/2 cup sliced mushrooms
1 red bell pepper, sliced
4 garlic cloves

4 servings Change size or US/metric
Change to: servings US Metric

25 minutes 20 mins prep
