Adapted from Quaker Oatmeal Vanishing Oatmeal Raisin cookies recipe.
1 stick butter, preferably unsalted
3/4 cup brown sugar, packed
¼ cup honey
2 eggs, slightly beaten
1/2 cup unsweetened applesauce
1 tsp. pure vanilla extract
1 cup Hodgson Mill organic graham flour
1/2 cup all purpose unbleached flour
1 tsp. Watkins ground cinnamon
1 tsp. baking soda
1/2 tsp. salt
3 cups Quaker Old Fashioned oats
1 cup yellow raisins
parchment paper
OVEN 350F
Cut 2- 3 sheets of parchment paper to fit your cookie sheet.
Combine flours, cinnamon, soda and salt, mixing well. Set aside.
Cream butter into brown sugar, in a large bowl. Stir in honey, eggs, applesauce, and vanilla, mixing well after each additional ingredient (beat longer and more vigorously to ensure that honey is well blended into the mixture). Stir in flour mixture, mixing well. Fold in oats then raisins.
Drop rounded tablespoonfuls of cookie dough onto a parchment lined cookie sheet (leaving about 1- 1 1/2 inches of space between cookies). Bake in center of 350F preheated oven for 10-15 minutes or until tops of cookies are just slightly brown. While one pan of cookies is in the oven, drop another batch of cookie dough onto the parchment paper, then slide it onto cookie sheet pan for baking.
Cool for 1 minute on cookie sheet, then remove to cooling rack. ENJOY!
