oxtails (about 3-4lbs total) cut into 2 pieces
1 clove garlic chopped
1onion chopped
1 bay leaf
1cup dry red wine
3 cups-canned beef broth (swansons)
2 tbsp butter
2 tbsp flour
16oz fresh baby whole onions(pearl onions)
1/2 pound small mushrooms, halved
1 cup fresh or frozen peas
1 cup fresh or frozen baby whole carrots
in a large saucepan, combine oxtails,garlic,chopped onions,bayleaf,wine,and broth, cover and simmer gently for 1 1/2 to 2 hrs. or untill meat is tender. Remove oxtails pieces . Mix butter and flour and stir into soup,blending intill slightly thickened, add oxtails and remaining vegetables (cover and simmer about 30 mins. or untill vegetable are tender, remove bayleaf . Season to taste with salt and pepper.
